Afghan recipe #1 Qabuli

this recipe was given to me by an Afghan woman I spent a day with in Wainwrightistan



smsteele at WWx

basmati rice
cooked chicken, deboned, cut into small pieces
carrot, julienned
raisins
garum masala

wash and boil the rice for 20 – 30 minutes.
when soft, drain, put into a casserole dish.
in another pot, add oil, chicken and raisins and cook at 300 degrees
add this to the rice, add carrots
cover the casserole dish with a cloth
turn temperature down and listen
for the Qabuli
to tick, tick, tick.
